1. Mutton ordinary mince, 1 kg.
2. Dried fried onions, 2 large.
3. Thick yogurt, 1 cup.
4. Ginger & garlic paste, 1 tbsp.
5. Fresh green chillies, 3 to 4, in two pieces.
6. Crushed red chilli, 2 tbsp.
7. Salt, 1 1/2 tsp.
8. Zeera (cumin seed), 1 tbsp.
9. Lemon juice, 3 tbsp.
10. Fresh ginger (2 inch), sliced.
11. Garam masala, 1 tsp.
12. Roasted chickpeas, 3 tbsp.
13. Poppy seeds, 1 tbsp.
14. Black pepper corns (kali mirch), 10 to 15.
15. Long (cloves), 4 to 6.
16. Green cardamom, 4 to 5.
17. 1 piece of coal (for barbecue flavour).
18. Oil or ghee, 1 cup.
1: grind the chick peas, cumin seeds, poppy seeds, cloves, black pepper corns, green cardamom to a powder and keep aside.
