1: mutton chops 1 kg
2: ginger & garlic paste 1 tbsp
3: turmeric 1/2 tsp
4: salt 1 tsp
5: red chilli powder 1 & 1/2 tsp
6: ginger & garlic paste 1 tsp
7: cumin seeds 2 tsp (dry roasted and crushed)
8: coriander seeds 2 tsp (dry roasted and crushed)
9: melon seeds 2 tbsp
10: cashew-nuts 20
11: bullet green chilli 3 (cut in half)
12: spring onions 2 (chopped)
13: tomato ketchup 1 cup
14: onions 2 large (finely chopped)
15: thick greek yogurt 1 cup
16: oil 1/2 cup
17: coal to smoke the curry
1: in a pan add chops, ginger & garlic paste 1 tbsp and boil meat for 15 minutes, then drain & keep aside.
2: heat oil add onions, ginger & garlic paste 1 tsp and fry till golden, on high flame.
3: grind the melon seeds and cashew nuts to a powder, keep aside.
4: once the onions are golden add grinned melon seed, grinned cashew nuts, turmeric, salt, red chilli powder, cumin, coriander fry for 2 minutes, on medium flame.
5: now add the boiled chops, yogurt, ketchup, water 2 glass, mix well and wait for a boil on high flame, then cover and cook on low to medium till the oil comes on the surface and the mutton is tender.
6: then add the spring onions, green chilli mix well and close the flame.
7: heat the coal.
8: place a foil or metal bowl on the curry, place the hot coal little oil on the top, cover till the smoke settles.
9: garnish it with chips.
10: serve hot with naan, taftan.
