1: okra 1 kg (washed & cut in pieces)
2: onion 1 kg (peeled & sliced)
3: tomatoes 400g (chopped)
4: garlic 1 bulb (julienne cut)
5: ginger & garlic paste 1 & 1/2 tbsp
6: yogurt 4 tbsp
7: red chilli powder 1 & 1/2 tsp
8: cumin seeds 1 tsp (dry roasted & crushed)
9: cumin powder 2 tsp
10: coriander powder 1 tbsp
11: turmeric 1/2 tsp
12: garam masala powder 1 tsp
13: bullet green chilli 6 (chopped)
14: oil 1 cup
15: coriander leaves hand full
1: heat oil add onions and fry on high flame till gets soft.
2: now add the okra, salt and fry for 12 minutes on high flame, once fried transfer it in a bowl.
3: in the same oil add ginger & garlic paste and fry for 2 minutes.
4: then add tomatoes, turmeric, roasted cumin, garam masala powder, cumin powder, coriander powder, red chilli powder, water 1/2 cup mix well and cook on medium flame till the tomatoes reduce and oil seperates.
5: now add the yogurt mix and cook futher till the oil seperates, on high flame.
6: add garlic, green chilli mix and fry for 1 minute on high flame.
7: then add the fried okra and onion mixture mix and simmer on low flame for 10 minutes.
8: add corinader leaves mix.
9: serve hot with roti, paratha, naan.
