1. 1 cup oil
2. 1 cinnamon stick
3. 2 black cardamom
4. 1 tsp cumin seeds
5. 1 green chilli (chopped)
6. 1 large onion (finely chopped)
7. 1 tbsp crushed ginger
8. 1 & 1/2 tbsp crushed garlic
9. 1 & 1/2 tsp red chilli powder
10. 1 tsp Kashmiri chilli powder
11. 1 & 1/2 tsp salt
12. 1 tsp cumin powder
13. 1 tbsp coriander powder
14. 500g tomatoes (ground)
15. 500g skinned black lentils (mash dal) (soaked overnight, then boiled with 1 tsp salt, 1 tsp turmeric)
16. 1 tsp garam masala powder
17. 4 bullet green chillies (sliced)
18. 1 inch ginger (julienne cut)
19. Handful of coriander leaves
1. Heat oil, add cinnamon stick, black cardamom, cumin seeds, green chilli, and onions. Fry until golden on high flame.
2. Add ginger, garlic, and fry for 2 minutes with the onions.
3. Now, add red chilli powder, Kashmiri chilli powder, salt, cumin powder, coriander powder, tomatoes. Mix and cook on low to medium flame until the oil separates.
4. Washed and soaked lentils overnight, then boiled with salt and turmeric until tender.
5. Add the boiled dal to the masala, mix well, add 1 cup water, cover, and cook on low flame until the water dries.
6. Add garam masala powder, green chilli, ginger, fresh coriander. Mix.
7. Serve hot with roti, naan, salad. Enjoy the flavorful Dhaba experience!
