To Make Darbari Masala Powder:
- 2 tbsp cumin seeds
- 2 tbsp coriander seeds
- 1 ½ tbsp fennel seeds
- 12 green cardamom pods
- 6 button red chilies
- 1 cinnamon stick
- 12 almonds
- 12 cashew nuts
To Marinate Chicken:
- 1 kg chicken
- 1 ½ tsp red chili powder
- 1 ½ tsp salt
- ½ tsp red food color
- 2 tbsp ginger & garlic paste
- 4 tbsp tomato puree
- 1 cup yogurt
- 4 tbsp dry roasted masala powder (from above)
Other Ingredients:
- 100g unsalted butter
- ? cup oil
- 3 medium onions (ground)
- 4 large tomatoes (ground)
- 1 heaped tbsp dry fenugreek leaves
- 4 bullet green chilies
- ½ cup cream
- Handful of fresh coriander leaves
1. Prepare the Darbari Masala Powder:
- In a frying pan, add cumin seeds, coriander seeds, fennel seeds, green cardamom, button red chilies, cinnamon stick, almonds, and cashew nuts.
- Dry roast until aromatic and then grind to a fine powder. Set aside.
2. Marinate the Chicken:
- In a large bowl, combine the chicken with red chili powder, salt, red food color, ginger & garlic paste, tomato puree, yogurt, and 4 tbsp of the prepared masala powder.
- Mix thoroughly and let it marinate for at least 3 hours.
3. Cook the Chicken:
- Heat oil and butter in a large pan over high flame.
- Add ground onions and fry until golden brown.
- Add the marinated chicken and cook on high flame for 6 minutes, stirring frequently.
4. Add Tomatoes:
- Add ground tomatoes to the pan, mix well, and continue to cook on high flame.
- Add 1 cup of water, cover, and cook on low to medium flame until the chicken is tender.
5. Final Touches:
- Once the oil separates from the gravy, add dry fenugreek leaves, bullet green chilies, and cream. Mix well.
- Cook on high flame until the oil separates again.
6. Garnish and Serve:
- Add a handful of fresh coriander leaves and mix gently.
- Serve hot with rice, roti, naan, or paratha.
