For Boondi:
- 1 1/2 cups gram flour (sieved)
- 1/4 tsp salt
- 1 tsp baking powder (or 1/4 tsp baking soda)
- Water (as needed for batter)
- Oil (for frying)
For Boondi Chaat:
- 2 1/2 cups fried boondi (soaked in water with 1 tsp salt)
- 500g yogurt
- 1 tsp salt
- 1 tsp crushed red chilli
- 1 tbsp chaat masala powder
- 1 tsp green chilli paste
- 1 1/2 tbsp lemon juice
- 1 cup milk (or water)
- 3 green chillies (chopped)
- 2 medium tomatoes (deseeded & chopped)
- 1 medium onion (finely sliced)
- 1 cup cabbage (finely sliced)
- 2 medium potatoes (boiled)
- 1 cup chickpeas (canned)
- 3 tbsp coriander leaves
Other Ingredients:
- Papri (fried flour crisps)
1. In a bowl, sieve the gram flour and add salt. Gradually add water while beating with an electric whisk until well combined.
2. Add baking powder and beat for 3 to 4 minutes until the mixture becomes fluffy and light in colour.
3. To test if the batter is ready, drop a little batter into water. It should float. Let the batter rest for 12 to 15 minutes.
4. Heat oil for frying.
5. Transfer the batter into a squeezable bottle and squeeze it into the hot oil.
6. Fry until golden brown, then transfer to a paper towel to remove excess oil.
7. Allow the boondi to cool completely and store in zip lock bags.
8. Soak the fried boondi in salted water until soft, then squeeze out the water and set aside.
9. In a bowl, whisk together yogurt, salt, crushed red chilli, chaat masala, green chilli paste, lemon juice, and milk (or water).
10. Add green chillies, tomatoes, onions, cabbage, potatoes, chickpeas, soaked boondi, and coriander leaves. Mix well.
11. Serve chilled with sweet tamarind chutney, papri, and additional chaat masala powder on top.
