First Marinade:
- 800g white fish fillets
- 4 tbsp lemon juice
- 1 tsp crushed red chili (heaped)
- 1 tsp red chili powder (slightly heaped)
- 1 tbsp dry fenugreek leaves
- 1 tsp carom seeds
- 1 tsp salt
- 2 & 1/2 tsp crushed coriander
- 1 tbsp crushed garlic (heaped)
Second Marinade:
- 1 cup gram flour (besan)
- 1/4 tsp yellow food color
- 1/2 tsp carom seeds
- 1 tsp red chili powder
- 1 tsp dry fenugreek leaves
- 1 & 1/2 tsp crushed red chili
- 2 tsp crushed coriander seeds
- 1 tsp salt
- Water, as needed to make a smooth batter
Other Ingredients:
- Oil, for frying
- Chat masala, for sprinkling
1. Marinate the Fish: In a bowl, combine the fish with all the ingredients listed under the first marinade. Mix well and let it marinate for 30 minutes.
2. Prepare the Batter: In another bowl, mix all the ingredients for the second marinade to form a smooth batter. Coat the marinated fish fillets with this batter and let them rest for another 30 minutes.
3. Fry the Fish: Heat oil in a frying pan or deep fryer. Once hot, carefully add the fish fillets and fry them on medium-high heat for approximately 6 to 7 minutes or until golden brown and crispy on all sides. Make sure not to overcrowd the pan, fry in batches if necessary.
4. Serve: Once fried, remove the fish from the oil and place them on a paper towel-lined plate to drain excess oil. Sprinkle some chat masala over the fried fish for an extra burst of flavor. Serve hot with your favorite Salad, Chutney, and freshly made Roti or Rice.
