For Marination:
- 1 kg boneless chicken
- 1 tbsp (heaped) ginger & garlic paste
- 2 tbsp tikka masala
- 2 tbsp lemon juice
- 1 tbsp crushed red chilli
- 1/4 tsp food colour
- 1 cup yogurt
To Cook the Chicken 80%:
- 1/4 cup oil
- Coal for smoking the chicken
For Curry:
- 1/2 cup oil
- 2 large onions, ground
- 2 large tomatoes, ground
- 2 tbsp tomato puree
- 1 tbsp coriander powder
- 1 tsp salt
- 1 tsp red chilli powder
- 1 cup water
- Coal for smoking the curry
- 1 cup cream
- 1 tbsp dry fenugreek leaves
1. In a bowl, combine the chicken with all the ingredients listed under marination. Mix well and let it marinate for an hour.
2. Heat oil in a pan, add the marinated chicken, and cook over medium heat until the chicken is 80% cooked.
3. Heat the coals.
4. Once the chicken is cooked, place the hot coals in a bowl, add a little oil, and cover until the smoke settles.
5. To make the curry, heat oil in a separate pan. Add ground onions and fry over high heat until golden brown.
6. Now add ground tomatoes, tomato puree, coriander powder, red chilli powder, and water. Cover and cook over low to medium heat until the oil separates.
7. Add the cooked chicken to the curry mixture, place the hot coal on top, and wait until the smoke settles.
8. Add 1/2 cup of water, cover, and cook over low heat until the oil separates.
9. Now add cream, mix well, and cook over high heat until the oil separates.
10. Finally, add dry fenugreek leaves, mix well, and serve hot with naan, roti, paratha, or rice.
