1: plain flour 315g or 2&2/3 cups
2: brown sugar 1&1/2 cups
3: eggs 4
4: vanilla essence 1 tbs
5: baking soda 1 ts
6: baking powder 1 ts
7: salted butter 300g (room temperature)
8: milk 1 cup
9: 9 inch baking tray 2 (greased)
Cookie Dough:
1: plain flour 1 cup & 2 tbs
2: salted butter 60g (room temperature)
3: brown sugar 6 tbs
4: sweetened condensed milk 130g or 1/2 cup
5: chocolate chips semi sweet 1/4 cup
6: vanilla essence 1 tbs
Frosting:
1: powder sugar 2 cups
2: cream cheese 250g
3: packed brown sugar 1/2 cup
4: milk 2 tbs (if required)
5: vanilla essence 2 tbs
6: salted butter 200g (room temperature)
7: coco powder 1/2 cup
8: cookies for decoration (ready made or check the link on the video or click HERE )
Preheat ven 350f, 180c, Gas Mark 4
1: sieve the flour, baking soda, baking powder and keep aside.
2: beat sugar, butter till creamy on high speed.
3: add the eggs one at a time and beat well then add the vanilla and beat again.
4: now add half of the flour mixture, half milk and beat well then add the remaining flour and milk and beat.
5: divide the batter in the 2 greased tins and bake for 25 to 35 minutes.
6: now let it cool in the tin for 10 minutes then flip it on the cooling rack and allow to cool completely.
Filling Cookie Dough:
1: beat the sugar, butter till creamy on high speed.
2: now add the vanilla, condensed milk, flour and beat till combined on high speed.
3: add the chocolate chips and mix well.
Frosting:
1: beat butter, cream cheese, vanilla, sugar till creamy on high speed.
2: then add coco powder, powder sugar and beat till combined (if the frosting is to stiff then add the milk).
Assemble Cake:
1: place one cake on a plate and spread the cookie dough on it then place the other cake on top and press down then fill the sides of the cake with the remaining cookie dough to make it even.
2: now add the frosting on the cake and spread all over.
3: place the cookies around the cake to decorate.
4: now enjoy.
