For Making Chocolate Cupcake:
1: plain flour 1 cup
2: unsweetened cocoa powder 1/4 cup & 2 tbsp
3: baking powder 3/4 tsp
4: baking soda 1/2 tsp
5: salt 1/2 tsp
6: brown sugar 1/2 cup
7: granulated sugar 1/2 cup
8: oil 1/3 cup
9: buttermilk or yogurt 1/2 cup
10: egg 1
11: vanilla essences 2 tsp
12: boiling water 1/2 cup
13: coffee 1 tsp
14: cupcake liners
For Peanut Butter Frosting:
1: salted butter 115g (softened)
2: creamy peanut butter 250g
3: powder sugar 240g
4: heavy whipping cream 3 tbsp
5: vanilla essences 1 tsp
For Topping:
1: mini reese's
Preheat Oven: 350f, 180c, Gas Mark 4.
1: in a large mixing bowl, sift together the flour, cocoa powder, baking powder, baking soda, and salt.
2: whisk in the granulated sugar and brown sugar until well combined.
3: add in the oil, buttermilk, egg, and vanilla extract and mix until just combined.
4: then add hot coffee and mix until fully dissolved.
5: the batter will be thin, this is okay.
6: evenly distribute the batter between all cupcake liners, making sure to just fill each one a little over halfway full.
7: bake for 18-20 minutes or until a toothpick inserted into the center of the cupcake comes out clean.
8: remove from the oven, carefully remove the cupcakes from the pan, and transfer to a wire rack to cool completely.
To make the peanut butter frosting:
1: beat the butter on medium speed for 1-2 minutes or until smooth.
2: add in the peanut butter and continue mixing until well combined with the butter.
3: add in the powdered sugar, heavy whipping cream, and vanilla and mix on medium-high speed for about 1 more minute until the mixture is thick and creamy.
4: pipe on the cooled cupcakes and place miniature peanut butter cup.
5: serve and enjoy.
