For Cake:
1: unsweetened cocoa powder 65g
2: plain flour 260g
3: baking powder 1 tsp
4: baking soda 1 tsp
5: sugar 335g
6: eggs 3
7: vanilla essences 1 & 1/2 tbsp
8: mayonnaise 220g (full fat or light mayonnaise)
9: water 320ml room temperature (mixed with) coffee 1 tsp (heaped) (or) water 320ml
For Chocolate Ganache:
1: chocolate 225g semisweet (cut into small pieces)
2: salted butter 14g
3: whipping cream 180ml
Preheat Oven 180c, 350f, gas mark 4 fifteen minutes before.
1: in a bowl add cocoa powder, plain flour, baking powder, baking soda mix well and keep aside.
2: in a separate bowl add eggs, sugar, vanilla essences beat on high speed for 3 minutes.
3: then add the mayonnaise and beat until incorporated, on low speed.
4: with the beater on low speed, alternately add the flour mixture (in three additions) and the coffee (or water) (in two additions), beginning and ending with the flour.
5: grease the baking dish 9 x 13 x 3 inch or 2 cake tins of 8 inch.
6: pour the batter into the pan.
7: place the tray in the oven and bake for 30 to 35 minutes, or until a toothpick inserted into the centre of the cake comes out clean.(leave the cake to cool completely).
8: place the chopped chocolate in a medium sized heatproof bowl.
9: heat the cream and butter in a saucepan, over medium heat, bring it just to a boil. Immediately pour the boiling cream over the chocolate and allow to stand for a few minutes.
10: stir until smooth, then let stand at room temperature until the ganache has completely cooled and becomes thick (can also place in the refrigerator).
11: then with a hand mixer or wire whisk beat until soft and fluffy.
12: spread the ganache on the top of the cake.
13: serve with tea, coffee.
