For Marination:
1: boneless chicken 1kg (cut in small pieces)
2: yogurt 1 cup
3: lemon juice 3 tbsp
4: ginger & galice paste 2 tbsp
5: cumin seeds 1 & 1/2 tsp (dry roasted & crushed)
6: crushed red chilli 2 tsp
7: cumin powder 2 tsp
8: turmeric 1/2 tsp
9: garam masala powder 1 tsp
10: salt 1 & 1/2 tsp
11: red chilli powder 1 tsp
To Make Chutney:
1: fresh coriander leaves 1 small bunch
2: mint leaves 25 to 30
3: crushed red chilli 1 & 1/2 tsp
4: chaat masala 1 tsp
5: salt 1/2 tsp
6: cumin seeds 1 tsp (dry roasted & crushed)
7: lemon juice 3 tbsp
8: green chilli 3
9: garlic 3 cloves
10: ginger 1 & 1/2 inch (peeled)
11: water 4 tbsp
Other Ingredients:
1: oil 4 tbsp
2: coals to smoke the chicken
3: water 1 cup
4: tortilla homemade check the link (or) readymade
5: onion (sliced)
6: red cabbage (sliced)
7: cucumber (sliced)
8: mayonnaise
1: in a bowl add all ingredients under marination, mix well and keep aside for 1 to 2 hours.
2: heat oil add the marinated chicken and cook on high flame till changes colour now add water, cover and cook on medium flame till the oil seperates and chicken is tender.
3: in a blender add all ingredients under chutney, greind to a paste and keep aside for later use.
4: heat the coals.
5: smoke the chicken as showen in the video.
6: warm the tortilla spread mayonnaise, green chutney, chicken, cabbage, cucumber, onions and wrap it or make a roll your choice.
7: serve hot with fries and cold drinks.
