For Making Masala Powder:
1: cumin seeds 2 tsp
2: cinnamon stick 3 pieces
3: cloves 15
4: green cardamom 8
5: black peppercorn 1/2 tsp
6: nutmeg 2 pieces
7: mace 2 pieces
For Curry:
1: oil 1 cup
2: cumin seeds 1 tsp
3: onions 3 large (finely sliced)
4: ginger & garlic paste 2 tbsp
5: tomatoes 4 large (chopped)
6: turmeric 1/2 tsp
7: cumin powder 2 tsp
8: red chilli powder 1 tsp (heaped)
9: salt 1 & 1/2 tsp
10: chicken 1 kg
11: yogurt 1 cup
12: chicken mince 1/2 kg
13: cream 1/2 cup
14: fresh coriander hand full
15: green chilli 5
1: in a frying pan dry roast all ingredients under masala powder, leave to cool and then grind to a powder.
2: heat oil add cumin seeds, onions and fry on high flame till the onions get golden.
3: add ginger & garlic paste and fry on high flame for further 7 minutes.
4: now add tomatoes, turmeric, cumin powder, salt, red chilli powder and the dry roasted spice powder, mix well and cook till the tomatoes reduces and oil separates.
5: then add chicken mix and add yogurt cook for 6 minutes on high flame.
6: add the chicken mince mix well add 1 cup of water, wait for a boil on high flame then cover and cook on low to medium flame till the chicken is tender and oil separates.
7: then add cream mix and cook on high flame till the oil separates.
8: now add fresh coriander, green chilli mix well.
9: serve hot with naan, roti, paratha.
