For Kababs:
1: onions 2 small
2: green chilli 7
3: boneless chicken 1 kg
4: cumin seeds 2 tsp
5: coriander powder 2 tsp
6: crushed black pepper 1 tsp
7: salt 1 tsp
8: crushed red chilli 2 & 1/2 tsp
9: ginger & garlic paste 2 tbsp
10: gram flour 2 tbsp (dry roasted)
11: mint leaves 15
12: fresh coriander 4 tbsp
For Chutney:
1: green chilli 5
2: yogurt 1 cup
3: cumin seeds 1 & 1/2 tsp
4: garlic 4 cloves
5: mint 1 small bunch
6: coriander 1/2 bunch
7: salt 1 tsp
Other Ingredients:
1: oil for frying
2: coal to smoke the kababs
3: onion rings
4: sweet chilli sauce
1: place the onions, green chilli in the chopper and grind.
2: now add chicken and grind till mixed well.
3: add cumin seeds, coriander powder, crushed black pepper, salt, crushed red chilli, ginger & garlic paste, gram flour, mint, fresh coriander and grind till combined.
4: in a blender jug add green chilli, yogurt, mint, coriander, garlic, salt, cumin grind till smooth keep aside for later.
5: make kababs by greasing your palms and the wooden spoon and place the mince on the spoon handle spread the mixture and remove as shown in the video or just make long kababs as shown in the video.
6: heat oil.
7: shallow fry the kababs till golden on medium flame.
8: heat coals.
9: smoke the kababs as shown in the video.
10: place a paratha add kabab, onion, mint chutney, sweet chilli sauce.
11: serve hot with fries and cold drinks.
