Chicken Marination:
1: chicken 1 kg
2: red food colour 1/4 tsp
3: ginger & garlic paste 2 tbsp (heaped)
4: salt 2 tsp
5: red chilli powder 2 tsp
6: garam masala powder 1 tsp
7: turmeric 1 tsp
8: corainder powder 2 tbsp
9: cumin powder 2 tbsp
10:yogurt 1 cup
Other Ingredients:
1: oil 1 cup
2: mace 2 pieces
3: star anise 1 (break in pieces)
4: cumin seeds 1 & 1/2 tsp
5: cinnamon sticks 2
6: cloves 6
7: bay leaves 3
8: black peppercorn 1/2 tsp
9: green cardamom 6
10: almonds 25 (grind to a powder)
11: cream 1 cup
12: fried onions 2 large (fry it)
13: fresh coriander hand-full
14: green chilli 6
15: kewra water 2 tbsp
1: marinate the chicken with all the ingredients under marination, mix well and keep aside for 1 hour.
2: heat oil add mace, star anise, cumin, cinnamon, cloves, bay leaves, black peppercorn, green cardamom, marinated chicken mix well and cook on high flame till the chicken releases water.
3: now add almonds, cream mix cover and cook on medium or low to medium flame till the oil separates.
4: then add the fried onions mix and cook further till the oil separates.
5: add fresh coriander, green chilli, kewra water mx well.
6: serve hot with naan, roghni naan, roti.
