Ingredients for Chicken Manchurian:
To Marinate Chicken:
- Boneless chicken: ½ kg
- Garlic: 1 tsp (crushed & heaped)
- Dark soy sauce: 2 tbsp
- Oyster sauce: 2 tbsp
- Crushed red chilli: 1 tsp (heaped)
- Black pepper powder: 1 tsp
- Salt: ½ tsp
- Cornflour: 3 tbsp
- Plain flour: 3 tbsp
- Egg: 1
For the Manchurian Sauce:
- Oil: 4 tbsp
- Garlic: 1 tsp (crushed & heaped)
- Tomato ketchup: 1 cup (heaped)
- Chilli garlic sauce: ¼ cup
- Dark soy sauce: 2 tbsp
- Vinegar: 2 tbsp
- Sugar: 2 tbsp
- Salt: 1 tsp
- Crushed red chilli: 1 tsp
- Black pepper powder: 1 tsp
- Cornflour: 2 tbsp (mixed with ½ cup water)
- Bell peppers: 2 medium (deseeded & cut into small pieces)
- Onion: 1 large (separated into layers)
- Tomato: 1 large (deseeded & chopped)
Ingredients for Chicken Fried Rice:
- Oil: 1/3 cup
- Garlic: 1 tbsp (heaped)
- Chicken: 700g (cut into small pieces)
- Carrots: 2 cups (chopped)
- Cabbage: 2 cups (chopped)
- Black pepper powder: 2 tbsp
- Salt: 1 ½ tsp
- Chicken powder: 1 ½ tbsp (heaped)
- Dark soy sauce: 4 tbsp
- Rice: 1 kg (boiled with 1 ½ tbsp salt)
- Bullet green chilies: 5 (sliced)
Step 1: Marinate the Chicken
In a large bowl, combine boneless chicken with garlic, dark soy sauce, oyster sauce, crushed red chilli, black pepper powder, salt, cornflour, plain flour, and egg. Mix everything well and let the chicken marinate for at least 15 minutes for full flavor absorption.
Step 2: Fry the Chicken
Heat oil in a pan over medium flame. Fry the marinated chicken pieces until golden brown, about 7 minutes. Remove and place them on a paper towel to drain excess oil.
Step 3: Prepare the Manchurian Sauce
In a separate pan, heat oil and sauté garlic until golden. Add tomato ketchup, chilli garlic sauce, dark soy sauce, vinegar, sugar, salt, crushed red chilli, black pepper powder, and two large glasses of water. Stir and bring the mixture to a boil.
Step 4: Thicken the Sauce
Slowly add the cornflour-water mixture to the sauce, stirring continuously to thicken. Once the sauce reaches your desired consistency, add bell pepper, onion, tomato, and the fried chicken. Cook for 4 minutes on high heat, then turn off the flame.
Step 5: Cook the Chicken for Fried Rice
Heat oil in a wok and fry garlic until golden brown over high heat. Add chicken and ½ cup of water. Cook until the chicken is tender and the oil separates.
Step 6: Stir-Fry Vegetables
Add chopped carrots and cabbage to the wok, followed by black pepper powder, salt, chicken powder, and soy sauce. Stir-fry on high heat for 2 minutes to retain the crunch of the vegetables.
Step 7: Add Rice
Add the boiled rice to the wok and stir-fry for about 7 minutes on high flame. Finally, toss in the sliced bullet green chilies for an added kick.
Step 8: Serve
Serve the hot Chicken Manchurian with Chicken Fried Rice as shown in the video, or on a sizzling platter for an authentic dining experience. Enjoy your delicious, homemade Indo-Chinese feast!
