For Chicken Kofta:
1: chicken mince 1 kg
2: bread slices 4 (soak in water & squeeze the water or just add the fresh bread slices in a chopper to make crumbs or dry bread crumbs 1 cup)
3: corn flour 2 tbsp
4: green chilli 8 (grinned)
5: salt 1 tsp
6: ginger & garlic paste 1 & 1/2 tbsp
For Curry:
1: onions 2 large (grinned)
2: tomatoes 5 large (grinned)
3: ginger & garlic paste 1 tbsp
4: red chilli powder 1 tsp
5: salt 1 & 1/2 tsp
6: turmeric 1/2 tsp
7: coriander powder 2 tbsp
8: cumin powder 1 tbsp
9: cumin seeds 1 tsp
10: mustard seeds 1 tsp
11: curry leaves 20
12: oil 1 cup
13: fresh coriander handful
14: green chilli 2 to 3
1: in a bowl add mince, green chilli, bread, salt, ginger & garlic, corn flour mix well.
2: grease the palms with little oil and make the balls, keep aside.
3: heat oil add cumin seeds, mustard seeds, curry leaves, onion paste, ginger & garlic paste fry till the spluttering stops, on high flame.
4: then add tomato grinned, red chilli powder, salt, turmeric, cumin powder, coriander powder mix and cook on low to medium flame till the oil comes on the surface.
5: now add the mince balls, cook on medium flame till the water that comes out from the mince balls dries.
6: add water 4 glass, wait for a boil on high flame, then cover and cook on medium flame for 5 to 7 minutes.
7: now add green chilli, fresh coriander mix.
8: serve hot with naan, roti & enjoy.
NOTE: YOU CAN KEEP THE CURRY THICK OR THIN YOUR CHOICE, BY ADDING MORE OR LESS WATER.
