For the Pakora Masala:
- 2 tbsp coriander seeds
- 1 1/2 tbsp cumin seeds
- 2 tsp crushed red chilli
Other Ingredients:
- 500g potatoes, cut into thin cubes
- 2 large onions, finely sliced
- 5 green chillies, finely chopped
- 500g chicken, cut into small cubes
- 1 bunch spinach, chopped
- Pakora masala (as prepared above)
- 1 1/2 tsp salt
- 1 tsp red chilli powder
- 3 cups gram flour
- 1 cup yogurt
1. Grind coriander seeds, cumin seeds, and crushed red chilli coarsely using a grinder.
2. In a large mixing bowl, combine all the ingredients including potatoes, onions, green chillies, chicken, spinach, pakora masala, salt, and red chilli powder. Mix well.
3. Add yogurt and mix until well combined. Squeeze the mixture with your hand while mixing to release the liquid from the vegetables.
4. Heat oil in a deep frying pan.
5. Drop spoonfuls of the mixture into the hot oil and fry until golden and crisp, working in batches if necessary. Fry on medium to high heat.
6. Remove the pakoras from the oil and drain on paper towels to remove excess oil.
7. Serve hot with Ketchup, Tamarind chutney, Roti, or Naan.
