Ingerdients:
1. Chicken mince 1/2kg
2. Boiled & mashed potatoes 1large
3. Bread 1 slice (soaked into water and squeezed)
4. Egg 1
5. All spices 1tsp levelled
6. Black pepper powder 1tsp
7. Salt 1tsp heaped
8. Plain flour 1cup
9. Bread crumbs (fresh as much as required)
10. Egg 1
Recipe:
1. Get a bowl, add the mince, boiled and mashed potatoes, slide of bread (which was soaked and squeezed), one egg, salt, all spices, black pepper powder and mix well.
2. Rub some oil on your palms, take a tbsp of mince in to your hands and make your croquettes in oval shape.
3. Now roll each croquette in to the flour, then in to beaten egg and then in bread crumbs.
4. Get a frying pan, add enough oil, make sure oil is hot not boiling and add your croquettes to deep fry them inside and out on low to medium heat. Serve hot.
(To freeze - get a flat plate, put all your croquettes in a line, keep in the freezer till a little hard and then cover that layer of croquettes with a plastic bag and then line your next layer of croquette on top)
