Ingredients for Chicken Chatkhara Karahi:
For Karahi Masala Powder:
- 10 Green Cardamom pods
- 2 tbsp Black Peppercorns
- 2 tbsp Cumin Seeds (dry roasted & crushed)
- 2 ½ tbsp Coriander Seeds (dry roasted & crushed)
- 1 heaped tsp Chaat Masala Powder
Other Ingredients:
- ¾ cup Cooking Oil
- 1 large Onion (ground)
- 1 kg Chicken
- 1 heaped tbsp Ginger & Garlic Paste
- 1 ½ heaped tbsp Karahi Masala (prepared earlier)
- 3 tsp Crushed Red Chili
- 1 heaped tsp Salt
- 2 tbsp Lemon Juice
- 1 tsp Chicken Powder
- 4 Tomatoes (ground) or 1 cup Yogurt
- 1 cup Water
- 2 ½ inch piece of Ginger (cut into julienne strips)
- 4 Bullet Green Chilies (sliced)
- 1 ½ tbsp Dry Fenugreek Leaves
- A handful of Fresh Coriander Leaves
Instructions to Make Chicken Chatkhara Karahi:
1. Prepare the Karahi Masala:
Coarsely grind the green cardamom, black peppercorns, cumin seeds, coriander seeds, and chaat masala powder to make a homemade karahi masala. This spice blend will enhance the flavor of your dish.
2. Fry the Onions:
In a large pan, heat the oil and add the ground onion. Fry on high heat until the onions turn golden brown.
3. Cook the Chicken:
Add the chicken pieces to the pan and fry them on high heat until they change color. This step helps seal in the juices for tender, flavorful chicken.
4. Add Aromatics:
Mix in the ginger and garlic paste and continue frying for 2 more minutes. This will add depth to the flavor.
5. Spice it Up:
Add the homemade karahi masala, crushed red chili, salt, lemon juice, chicken powder, and ground tomatoes (or yogurt). Stir well and cook on high heat for about 2 minutes to let the spices infuse.
6. Simmer the Chicken:
Pour in 1 cup of water, stir, and cover the pan. Let the chicken cook on low to medium heat until it's tender and the oil separates from the gravy.
7. Final Garnish:
Add the julienned ginger, sliced green chilies, and dry fenugreek leaves. Stir everything together and let it simmer on low heat for 8 minutes to absorb all the flavors.
8. Serve:
Sprinkle fresh coriander leaves on top, and your delicious Chicken Chatkhara Karahi is ready to serve. Pair it with naan or roti for a complete meal.
