To Make Masala Powder:
1: green cardamom 12
2: cumin seeds 1 & 1/2 tbsp
3: coriander seeds 2 tbsp
4: fennel seeds 1 & 1/2 tbsp
5: dry red chilli 10
To Marinate Mince:
1: mutton mince 1 kg
2: grinned powder
3: meat tenderiser powder 1 tsp
4: salt 1 & 1/2 tsp
5: red chilli powder 1 tsp
Other Ingredients:
1: clarified butter 1 cup
2: onion 2 large (grind)
3: ginger & garlic paste 1 & 1/2 tbsp
4: tomatoes 4 large (grind)
5: kashmiri red chilli 1 & 1/2 tsp
6: yogurt 1 cup
7: coals (to smoke the mince)
8: green chilli 4 (chopped)
9: mint leaves 15 (chopped)
10: coriander leaves hand full
1: heat a frying pan add the whole spices under masala powder, dry roast till a aroma arises and gets light golden, then leaves to cool and then grind to a powder.
2: in a bowl add mince and all ingredients under marination, mix and leave it for 1 hour.
3: heat clarified butter add onions and fry on high flame till gets golden.
4: now add ginger & garlic paste and fry for 2 to 3 minutes on high flame.
5: then add the tomatoes mix add the marinated mince mix well add Kashmiri red chilli, yogurt mix and cook on high flame for 7 to 8 minutes, keep stirring.
6: add 1 cup of water mix, cover and cook on low to medium flame till the oil separates.
7: heat the coals to smoke the mince as shown in the video.
8: then add green chilli, mint, coriander mix well.
9: serve hot with roti, naan, paratha.
