For Making a Roasted Mix Spice:
1: corainder seeds 1 & 1/2 tbsp
2: fennel seeds 1 & 1/2 tbsp
3: blackpepper corn 1 tsp
4: clove 15
5: green cardamom 8 (remove the skin)
To Marinate Chicken:
1: salt 1/2 tsp
2: turmeric 1/2 tsp
3: chicken 1 kg
For Curry:
1: oil 1/2 cup
2: cumin seeds 1 & 1/2 tsp
3: dry red chilli 6
4: onion 4 large (chopped)
5: ginger & garlic paste 1 tbsp
6: tomatoes 4 medium (grind)
7: turmeric 1/4 tsp
8: red chilli powder 1 & 1/2 tsp
9: salt 1 tsp
10: dry roasted and grinned spice powder 2 tbsp
11: yogurt 1/2 cup
12: fresh coriander a small bunch
1: heat a frying pan add the dry spices as shown in the video and dry roast till changes colour and a nice aroma rises.
2: then grind it to a powder.
3: marinate chicken with salt, turmeric mix and keep aside for 1/2 hour.
4: heat oil add cumin seeds, dry red chilli, onions and fry on high flame till changes colour.
5: then add ginger & garlic paste and fry for 3 minutes on high flame.
6: add the tomatoes and cook on high flame till the oil comes on the surface.
7: now add the marinated chicken and fry it on high flame for 4 minutes add turmeric, red chilli powder, salt, roasted masala powder, yogurt, water 1 cup mix well, wait for a boil on high flame then cover and cook on low to medium flame till the oil comes on the surface.
8: add fresh coriander mix well.
9: serve hot with naan, roti, paratha or rice.
