1: okra 1 kg (washed & dried and then cut in pieces)
2: onions 1/2 kg (sliced)
For Curry:
1: oil 1/2 cup
2: chicken 1 kg
3: onions 2 large (finely sliced)
4: ginger & garlic paste 1 tbsp
5: green chilli 1 (chopped)
6: tomatoes 3 large (sliced)
7: salt 1 & 1/2 tsp
8: red chilli powder 1 & 1/2 tsp
9: turmeric 1/2 tsp
10: cumin powder 1 & 1/2 tsp
11: coriander powder 2 tsp
12: garlic 8 cloves (sliced)
13: green chilli 2 (chopped)
14: cumin seeds 2 tsp (dry roasted & crushed)
15: coriander seeds 2 tsp (dry roasted & crushed)
16: garam masala powder 1 tsp
17: fresh coriander handful
1: heat oil and fry the okra on high flame and once fried place on paper towel.
2: now add the onions and fry till gets soft on high flame, place on paper towel.
3: heat oil add the onions, ginger & garlic paste mix and fry on high flame till gets golden.
4: add green chilli, tomatoes, salt, turmeric, red chilli powder, cumin powder, coriander powder, water 1 cup mix and cook on medium flame till the oil comes on surface and the tomatoes reduce.
5: now add the chicken and fry on high flame till changes colour, then add water and wait for a boil on high flame, cover and cook on low to medium flame till the chicken is tender and oil comes on surface.
6: then add garlic, green chilli, cumin roasted, coriander roasted, fried okra, onions, fresh coriander mix well and simmer on low flame for 5 minutes.
7: serve hot with Roti or Paratha.
