Biscuit Dough:
1: plain flour 2&1/2 cups
2: icing sugar 3/4 cup
3: salted butter 185g (room temperature)
4: cocoa powder 2 tbs
5: egg 1
6: baking powder 1&1/2 ts
Toppings:
1: strawberry jam 2 tbs
2: almonds 20 (sliced)
3: sugar 4 tbs
4: cocoa powder 2 tbs
5: icing sugar 5 tbs
6: water 1 tbs
Preheat Oven 160c, 325f, Gas Mark 3
1: sieve the icing sugar, flour, and baking soda.
2: beat the egg and keep aside.
3: in a large bowl add the flour, icing sugar, baking powder and mix it well.
4: then add the butter and mix with well till it looks crumbled, now add the beaten egg slowly and keep mixing till it becomes in to a medium dough.
5: now dust the working surface and knead the dough for 1 minute till gets smooth.
6: make a round ball and divide it in 4 (as we will be making 4 different biscuits).
7: using the first half, dust the surface and flatten the dough with your hands, add the almonds and press down on the almonds, use a cookie cutter and place the biscuits in the baking tray and bake it for 12 to 15 minutes.
8: use the second half of the dough, dust the surface add the cocoa powder to the dough and mix well, then spread the dough with your hands and use a flower cutter to cut the biscuits, place it on the baking tray and make holes on the middle for the filling, bake for 12 to 15 minutes.
9: use the third half of the dough, dust surface roll the dough and cut in squares, dip the sides in the sugar, brush a little egg on the top and bake for 12 to 15 minutes.
10: use the last part of the dough, dust surface and roll the dough and use the flower cutter to cut the dough, place them on the tray make holes and add the jam and bake to 12 to 15 minutes.
11: mix the cocoa powder, icing sugar and water mix well, when the chocolate biscuits are cool then add the chocolate sauce, leave it to set.
12: once the biscuits are baked cool completely and keep in air tight box.
13: enjoy the biscuits.
