1: oil 1/3 cup
2: onion 1 medium (sliced finely)
3: ginger 1 & 1/2 inch (Julian cut)
4: cumin seeds 1 & 1/2 tsp
5: black cardamom 2
6: cinnamon stick 2 inch piece
7: ginger & garlic paste 1 & 1/2 tsp
8: green chilli 3 (sliced)
9: tomatoes 2 medium (sliced)
10: salt 1 tsp (heaped)
11: red chill powder 1 tsp (heaped)
12: turmeric 1/2 tsp
13: potatoes 400g (pealed and cubed)
14: cauliflower 500g (cut in small pieces)
15: water 1 cup
16: yogurt 2 tbsp
17: dry fenugreek 1 tbsp

20: garam masala powder 1/2 tsp
1: heat oil add onion and fry till gets soft, on high flame.
2: add ginger, cumin seeds, black cardamom, cinnamon stick, ginger & garlic paste mix and fry it for 2 minutes on high flame.
3: now add green chilli, tomatoes, salt, red chilli powder, turmeric, water mix, cover and cook on medium flame till the oil comes on surface and the tomatoes reduce.
4: then add potatoes, cauliflower, water mix well and wait for a boil on high flame, then cover and cook on low to medium flame till the water dries and vegetables tender.
5: add yogurt mix and cook on high flame till the oil comes on surface.
6: now add dry fenugreek leaves, green chilli, ginger, garam masala powder mix and simmer on low flame for 4 minutes.
7: serve hot with roti, paratha.
